There is romance in traditional foods. We strive to preserve the stories behind how food is prepared by respecting both ingredients and tradition. We believe there is magic in turning milk into cheese. Our cheese journey begins at Palmyra Farm, where Ayrshire cows graze on plentiful pasture in the foothills of the Appalachian Mountains. We pick up as much raw milk as we can carry and bring it back to our Big Kitchen. We gently pasteurize the milk to preserve its natural character, culture it, and slowly stir until the milk changes before our eyes and begins its new life as cheese. We hand-fill molds with the curds and place the cheese into our aging room. Over time, the cheese matures into a traditional food that lets you recognize not only the farm where the milk originated but also taste the thousand-year journey the cheese has traveled to end up in our Baltimore Creamery.
We are proud to be among the few cheesemakers in Maryland, as well as the only cheesemaker in Baltimore City. Try all of our artisan cheeses along with any of our jams, bread, and our award-winning rye crackers.
